Black Bean, Quinoa
This recipe was spawned from a google of “healthiest foods”. These three made the top of the top of list and this combo was born. After the beans have cooked two hours, chop up half a cabbage into bite sized pieces and put in pot with quinoa. I was surprised to know the nutritional value of cabbage - who knew! This combo tops the chart in nutrition. Meatless, this should appeal to the vegans. A chopped up onion would add a kick as would a couple bouillon cubes. The extra half cabbage is good with natural peanut butter.
