- Conventional kitchens will really have to find their niche
- Conventional restaurants can set up their own ghost kitchens to bring in auxiliary revenue
- Allows conventional restaurants to reach regions they could not reach before
- Allows new and existing businesses to grow & experiment with little capital and financial risk
- Fewer service jobs, but more entrepreneurs
- Government concerns include:
- job loss
- impact on local independent businesses
- lack of grading/grading transparency
- responsibility for health code violations
- lack of permitting processes
- New York City Council’s Small Business Committee held a hearing in Feb 2020 with a few ghost kitchen companies, set to announce its first set of legislation aimed to regulate ghost kitchens for the first time soon
