I enjoyed this lab. I liked that we were able to use what we have learned in class and apply it to what we were doing in the lab. Although it was fun, we did have some difficulty. It was packed in our kitchen and hard to move around. We could have made things better by having different people in different positions so that is is not so crammed. I do feel like our group worked together although we were in a tight space.
Before preparing this recipe I did some studying on grains and how they work. Grains are all plants in the grass family. They are also known as cereals. There are four main parts of a grain, which are the bran, endosperm, germ, and the hull. The flour is considered a grain. When flour is mixed with a liquid it creates gluten. Gluten is a protein that affects the texture of the baked goods. Gluten provides support and structure to the rest of the ingredients in the recipe. When making the vanilla cupcakes the flour being added created a structure to form a base for the product. Two skills have have learned from baking is how to use a mixture and how to evenly distribute the batter. I enjoyed making the cupcakes and would want to do it again.
