Ingredients For the French Toast:
6 eggs
1 loaf of French bread cut into slices
2 cups Silk Fruit&Protein ( Mango Peach flavor)
2 tsp vanilla
butter for frying
Shredded coconut
Ingredients for the Pineapple Sauce:
1 tablespoon brown sugar
2 teaspoons cornstarch
1 (20 ounce) can crushed pineapple, undrained
1/4 cup orange marmalade
Directions:
1. In a shallow baking dish whisk the eggs, Silk Fruit&Protein, and vanilla until well blended.
2. Heat a frying pan or griddle on medium and add tablespoon or so of butter
3. Soak slices of bread in the egg mixture and place in preheated frying pan
4. Fry until golden and flip. Fry other side until golden as well.
5. Keep French toast warm in oven until all slices are cooked
6. While bread is frying, add the sugar, cornstarch, pineapple and marmalade to a small sauce pan and mix until blended; bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened.
7. Arrange French Toast on a plate, sprinkle with coconut and top with sauce.
