Ingredients:
2 Eggs
1 TBSP Peanut Oil
2 1/2 cups Vegetable Stock
1 large carrot
2-4 shredded cabbage leaves
1 TBSP Soy sauce
1/2 tsp sugar
Fresh Ground Pepper (to taste)
Frank's Hot Sauce (to taste)
Directions:
Beat the egg lightly in a bowl.
Heat the peanut oil in frying pan, pour in the egg and swirl the pan to spread. Cook over medium heat until it has set and underside is lightly browned.
Slide the omelet out of the pan. Roll it up and slice into 1" rounds and set aside.
Put the stock in a large pot. Add vegetables and bring it to boil. Reduce the heat and simmer for 5 minutes.
Add soy sauce, sugar, pepper and hot sauce
Stir and pour into bowls. Lay the sliced omelet rounds on top.
