Cauliflower "shrimp" cocktail
Ingredients:
1 cup dry crab boil seasoning
2 yellow onions -- peeled and quartered
6 cloves garlic, peeled
3 lemons -- halved crosswise
2 pounds cauliflower florettes
cocktail sauce
Directions:
1. Combine crab boil, salt, onions, garlic and 6 quarts water in large pot.
2. Squeeze juice from lemons into pot and add lemon halves.
3. Boil for 10 minutes.
4. Use a slotted spoon to remove onions, garlic, and lemons from broth.
5. While boiling, add cauliflower and turn off heat. Cover and let stand until califlower is slightly tender (5-10 minutes)
6. Drain and spread out on sheet to cool. (can be made a day ahead)
7. Chill and serve with cocktail sauce for dipping
