Aloo Paratha - Paratha de pasta de patata

ALOO PARATHA - PARATHA DE PASTA DE PATATA

Ingredients for 6 Paratha:

For the dough:

1/2 cup whole wheat flour

1/2 cup all purpose flour

1/2 tsp salt

1/2 cup lukewarm water (bit more, bit less)

For the Aloo (filling):

2 medium potatoes boiled with peel

1/2 tsp cumin seeds

1/2 tsp garam masala

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp chile flakes

Prepare dough:

1.Mix whole wheat flour, all purpose flour and salt in a bowl

2.Add water slowly while mixing by hand. You may need one or two tbs less (or more) than 1/2 cup, depending on the flours.  You want a soft dough but non-sticky. See Manjula video for reference.

3.Knead lighlty with a bit of oil

4.Leave the dough covered with damp paper towel for at least 10min

Aloo - Filling:

1.Peel and mash the potatoes (they should be boiled until tender but not overboiled)

2.Mix in salt, cumin seed, and spices

3.Knead by hand on the counter

4.Taste and correct with salt, black pepper to your taste

Assembly:

1.Divide the dough and the aloo into 6 balls. The aloo balls should be ~ 1 1/2 times bigger than the dough balls

2.Take one dough  ball, flatten into whole wheat flour and roll flat into ~3 inch diameter, hold on one hand and put on top one of the aloo balls

3.Close into a bigger ball as if you where doing dumplings, let rest on the counter, seam down

4.Do the same for the rest of the dough

5.Heat skillet to medium high

6.Roll each ball starting by the first prepared, seam side up. Use whole wheat flour to help rolling.  The dough should be ~6 inch diameter

7. Put paratha into skillet, observe change of color and puffing.

8. Flip and cook other side

9.Flip again and add 1/4 spoon oil, spread with flat spatula and flip.

10. Add few more drops of oil and flip again

11. Both sides should be a bit brownish. Paratha puffs very nicely
