CULINARY ARTS I - 223611

This introductory, semester course consists of units on food safety and sanitation, recipes, kitchen equipment and utensils, cooking and baking terminology, functions of ingredients, cookies, quick breads, nutrition, grains, dairy, protein, fruits and vegetables. Throughout the class we take notes, do online assignments, projects, do a wide variety of labs in the kitchen, while working independently as well as collaborating with partners.

CULINARY ARTS II - 223612

This semester course includes units on customer service and dining environments, food service management and labs that include breakfast, yeast breads, lunch and dinner items, sandwiches, pizza, pastas and sauces, meat cookery, specialty desserts and pastries.

CULINARY ARTS III - 223613

Culinary Arts III is a year-long, project-based course. Working the Rivherhawk Bakery is mandatory on Friday mornings before school!  Students cost out recipes, plan menus, shop for ingredients, and prepare/serve food for their own Friday MC Bakery. Food is also prepared for a variety of school events. Community resources and a college-level program are visited.

CULINARY ARTS IV - 223614 

Culinary Arts IV is a year-long, project-based and independent study course that partners with an employer. Students plan menus, price/shop for ingredients and prepare/serve food for an off-campus, public venue. Students need to be self-directed learners and maintain communication with the off-campus personnel. This will require hours spent outside of the school day.

SEWING & TEXTILES 1 - 231001
This is an introductory course designed to teach students the fundamental skills of sewing, fabric care, and basic garment construction. Through hands-on projects and classroom instruction, students will learn how to safely operate a sewing machine, serger and embroidery machine to complete required projects. They’ll gain experience reading and following simple patterns, selecting appropriate fabrics, and using basic sewing tools. Emphasis is placed on developing creativity, patience, and problem-solving skills while completing practical and fun projects such as pillowcases, bags and simple clothing items.

Students will also explore elements of fashion design, color theory, and the role of sewing in personal expression and sustainability. By the end of the course, students will have the confidence to complete beginner-level sewing projects and understand how sewing skills can apply to real-world situations, careers, and hobbies. With success students will be recommended to go on to Sewing & Textile Construction 2.

SEWING & TEXTILES 2

This intermediate-level course builds on the foundational skills learned in Sewing & Textiles 1 and is designed to strengthen students’ technical sewing abilities and confidence in garment construction. Through advanced hands-on projects and guided instruction, students will refine their use of the sewing machine, serger, and embroidery machine while learning more complex construction techniques. Emphasis is placed on accuracy, workmanship, and independent problem-solving.

Students will expand their skills in reading and altering commercial patterns, taking measurements, and selecting fabrics based on fiber content, durability, and intended use. Instruction includes garment fitting, seam finishes, closures (such as zippers, buttons, and elastic), and decorative techniques. Projects may include fitted garments, layered or structured apparel, and functional textile items that require multi-step construction.

The course also explores fashion design principles, textile innovation, sustainability, and potential careers within the fashion and textile industries. By the end of the course, students will be able to plan and complete intermediate-level sewing projects with increased independence, precision, and creativity. Successful completion prepares students for advanced sewing courses or continued study in fashion, design, or related career pathways.
