Spiced Yogurt Chicken Breast
1/4th of the recipe (approx one 4oz breast):
136 Calories, 28g Protein, 2g Fat, 0g Saturated Fat,
2g Carbs, and 223g Sodium.
does not include rice & green beans-see below
Ingredients:
1 pound cleaned skinless boneless chicken breast
( four 4oz breast work nice)
1/4 plain fat free yogurt
2 tsp grated lemon zest
1 1/2 tsp fresh lemon juice
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp ground cumin
1/4 tsp curry powder
1/8 tsp ground black pepper
Combine all ingredients in a large zip lock plastic bag.
Massage until all ingredients are mixed well.
Marinate in refrigerator for 24 hours.
Turn bag occasionally.
The next day, when ready to cook,
heat the grill, then grill chicken breast on medium flame,
turning once, until internal temp is 180 degrees
discard marinade.
I cup of the Biryani added:
170 cals, 4g prot, 36g carbs, 0g fat, 0g sat fat & 650g sod
1 cup of green beans added:
34 cals, 2g prot, 8g carbs, 0g fat, 0g sat fat & 7g sod
Note: My friends Dan & Steve sent me this recipe. The chicken comes out slightly tangy with a nice lemon taste, the other spices are very mild. The original called for 1/4 tsp ground clove, but I did not have any, and it was still very good. The chicken can probably be baked in the oven also, but I like as little mess as possible so I make Paul grill everything I can, all year round!
This recipe is wonderful because I make it the day before, in one bag-no mess, well I did have to clean the chicken. I used air chilled breast.
This could be served on greek salad with feta, or served with quinoa or couscous. Some greek olives maybe nice too, or maybe some dolma.
