Lazy Lasagna
1/8th of the recipe:
345 Calories, 29g protein, 9g Fat, 3g Saturated Fat,
35g Carbs, and 819g Sodium.
Ingredients:
1 pound extra lean (96% Fat Free) ground beef
(2) 28 oz jarred or can low fat marinara sauce
15 oz fat free all natural ricotta cheese
12 no boil lasagna noodle sheets
1/2 c grated parmesan cheese
4 slices 2% provolone cheese
Pre heat oven to 350
(I use convection bake)
On stove top in large pan ( I use 5 Qt All Clad Dutch Oven),
cook beef (do not add oil to pan, meat only),
set burner to medium
and break meat apart as it cooks.
Once meat is cooked through, remove from stove top,
one can/jar of sauce to meat,
then add the ricotta cheese, and all but 2 T of the parmesan.
Stir until well combined.
In a lasagna pan, or any deep pan you have,
(I used an 11 x 11)
put some of the other can/jar sauce on the bottom,
just enough to coat the bottom,
lay 4 noodles on top of the sauce,
put the remainder of the sauce,
except for 1 c into the meat mixture,
you will need this 1 c of plain sauce for the top.
On top of the first row of noodles,
place 1/2 the meat mixture, then the 4 slices of provolone,
4 more noodles go on top of this,
then the rest of the meat mixture,
then the last 4 noodles, cover with
the rest of the plain sauce.
cover with foil loosely,
cook for 45 mins,
remove foil sprinkle remaining parmesan on top,
place back in oven, uncovered for 15 mins or
until edges brown.
I like to add fresh basil on top before serving.
This makes 8 nice size servings or 4 pretty big ones.
Serve with a tossed salad or green veggie.
You can use 99% turkey or 1/2 turkey 1/2 beef to cut calories.
You can also make your own fat free sauce or use a pre made one,
just be sure to choose one you like.
Provolone can be switched with and cheese you like,
some veggies would also be a nice addition.
