Ingredients
1 ½ lbs (680g) flank steak, trimmed, cut into ½” (12.7mm) cubes
1 TBSP (15g) olive oil
1 cup (113g) bell pepper, cut into ½” (12.7mm) cubes- can use red, yellow, or green
1 cup (113g) onion, cut into ¼” (6.35mm) cubes
1 jalapeno, (about 1 ounce or 28g) cut into ¼” (6.35mm) cubes
2 TBSP (30g) tomato paste
Handful of fresh, chopped cilantro
12 soft or crunchy taco shells
Marinade Ingredients
¼ (60ml) cup olive oil
1 orange, juiced or 1/3 (78ml) cup of orange juice
2 limes, juiced or ¼ cup (60ml) lime juice
1 TBSP (15ml) vinegar (can use white, red or apple cider)
1 TBSP (15ml) soy sauce or liquid amino
4 cloves (17g), (or ½ ounce or 1 ½ TBSP) garlic, minced
1 TBSP chili powder
½ tsp (2g) cumin
½ tsp (2g) paprika
¼ tsp (1g) salt
Instructions
1. Whisk the marinade ingredients together then add the cubed beef and toss to coat. Let marinate in the refrigerator for at least 2 hours.
2. Heat a Dutch oven or a large skillet and the olive oil over medium heat. Add the onions and sauté for 2 minutes, lowering the heat once they start to brown.
3. Add the jalapenos and bell peppers and lightly sauté for another 2-3 minutes. Remove the onions and peppers from the pan and set aside. Place the pan back on the burner.
4. Turn the heat up to medium-high and add the beef with the marinade into the pan. Stir in the tomato paste.
5. Heat until boiling and then drop to a gentle simmer for 25 minutes.
6. Add the onions and peppers back to the pan and bring back to a boil then drop to medium heat. Cook the mixture for another 5 minutes stirring occasionally while allowing some of the cooked marinade to evaporate.
7. Once the marinade has been reduced to half the amount started with, remove from heat, and add fresh chopped cilantro.
8. Use 2 ounces (56g) Carne Asada mixture for each taco. Recipe will fill 12 soft or crunchy taco shells.
