Chicken Manicotti with Tomato Wine Sauce
1/6th of the recipe:
2 shells stuffed with sauce
449 Calories, 32g protein, 6g Fat, 2g Saturated Fat,
51g Carbs, and 1527g Sodium.
Ingredients:
1 pound cleaned boneless chicken breast
1 recipe Tomato Wine Sauce-see below
(or (2) 28 oz jarred or can low fat marinara sauce)
8 oz fat free all natural ricotta cheese
12 no boil lasagna noodle sheets
1/2 c grated parmesan cheese
1/2 c shredded light mozzarella cheese
handful of fresh basil chopped
Pre heat oven to 350
(I use convection bake)
On stove top in large pan ( I use 5 Qt All Clad Dutch Oven),
fill half way with water, bring to boil, add chicken,
boil for 10-15 minutes,
remove chicken to a large bowl and shredded immediately,
add 1/2 the sauce to chicken,
then add the ricotta cheese, the parmesan and the basil.
Stir until well combined.
Bring other pot of water to boil, add manicotti shells,
the recipe is for 12 but the box has 14,
cook all 14, incase a few break during cooking.
cook for 7 mins or until al dente
do not cook all the way.
In a lasagna pan, or any deep pan you have,
(I used an 11 x 11)
put some of the reserved sauce on the bottom,
just enough to coat the bottom,
stuff manicotti shells with chicken filling,
and place in pan,
put the remainder of the sauce on top.
sprinkle mozzarella over the top.
cover loosely with foil.
cook for 20 mins,
remove foil, place back in oven,
uncovered for 15 mins or until edges brown.
I like to add fresh basil on top before serving.
This makes 6 nice size servings
Serve with a tossed salad or green veggie.
The shells are huge pain to stuff, but look nice.
You could easily use no boil lasagna noodles and
make chicken lasagna.
You can also make your own fat free sauce or use a pre made one,
just be sure to choose one you like.
Tomato Wine Sauce
1/6th the recipe

38g Carbs, and 1176g Sodium.
Ingredients:
(2) 28 oz can crushed tomatoes
12 oz nice red wine
4 cubes frozen garlic or 4 cloves fresh garlic grated
8 oz fat free all natural ricotta cheese
6 packet sugar
1 tsp crushed red pepper
2 tsp 21 seasoning salute
2 tsp italian seasonings
1 tsp sea salt
1 tsp black pepper
handful of fresh basil chopped
In a large pot, combine all ingredients,
place on stove, bring to slow boil,
stir often, once boiling,
reduce to low simmer for 1 hour,
if too bitter add a bit more sugar.
SHORT CUT:
use 2 cans trader joe's tuscano marinara,
add wine, sugar & red pepper.
Simmer and done!
This has a small amount of fat from the can sauce,
but it's sooo easy & good.
You can use a sugar substitute, but i find those hard to cook with,
for the small amount needed I use real sugar or some times
sugar in the raw.
If you like spicy or a kick add more hot pepper.
An inexpensive wine that works well in this sauce is
Yellow Tail Cab.
I cook my meatballs in this sauce, they absorb some of the flavor.
