COURSE OVERVIEW
This is a hands-on and skills-based course designed to develop culinary proficiency and ignite creativity. This course aims to develop the practical cooking skills required in a modern professional kitchen. Students will learn about global flavours and diverse cuisines from around the world, gaining a deep appreciation for different culinary traditions and cooking styles. Working in real-world scenarios, students will master high-level skills and cooking techniques while experimenting with unique flavour, texture, and cooking style combinations. Students will learn about different ingredients, including their characteristics, flavour profiles, and their culinary applications when creating innovative dishes. The course will also provide students with opportunities to gain industry exposure through field trips and workshops, helping them understand the practical aspects of working in a professional culinary environment.
COURSE OUTCOME
The unit aims to provide students with a comprehensive understanding of culinary arts, encompassing essential food preparation techniques, international cuisines, and nutritional principles. Emphasising practical, hands-on experience, upon successful completion of the course, students will be able to develop and present their own recipes based on dietary requirements.
REAL WORLD APPLICATION:
Understand factors that may influence food choices, including the ability to cost recipes and make modifications in relation to religious and cultural beliefs, moral considerations, and food intolerances.

Students will learn about different ingredients, including their characteristics, flavour profiles, and culinary applications, as they create innovative dishes.
Students will work in teams, given real-world scenarios, to create high-level skill dishes that showcase a wide range of traditional and modern cooking techniques while experimenting with unique flavour, texture, and presentation combinations.

Pork dumplings - Introducing Chinese culture and the significance of dumplings during festive occasions. Students will learn how to prepare dumpling pastry and cook dumplings using three different methods.
Gnocchi - Italian potato dumplings are prepared using different techniques from Chinese dumplings.
Laksa - Introducing Malaysian culture and highlighting the significance of laksa as an important street food. Explore the cross-cultural similarities between the preparation of laksa noodles and pasta.
Drafting a "Crisis Management Plan" for a local weather event (Typhoon/Flood).
