Working in "Kitchen Brigades," students will tackle themed culinary challenges designed to sharpen communication, collaboration, and creative problem-solving. From perfecting knife skills to understanding the "why" behind traditional ethnic cooking, this course empowers young foodies to turn raw ingredients into professional-quality outcomes. It’s more than just a cooking class—it’s a flavorful exploration of how food binds us all together!
COURSE OUTCOME
By the end of this course, students will be able to evaluate the relationship between a country’s food culture and its traditional cuisine by researching one of the dishes they have cooked. This dish should reflect the food culture of a selected country, and the recipe should be made healthier for teenagers in the school community.

Students will work in a team to prepare and cook a range of traditional and ethnic foods. They will explore food culture from various countries and practice cooking methods and techniques from their cuisines
Students will develop life skills and an understanding of essential kitchen working practices. They will develop confidence in working with different ingredients and basic kitchen equipment.
COURSE OUTLINE
Students begin by earning their "Kitchen Passport." This phase focuses on the technical fundamentals—knife safety, heat control, and mise en place—while exploring the basic aromatics (garlic, ginger, onions, chilies) that form the DNA of global cuisine. They will master simple street foods, such as Mexican quesadillas and Vietnamese rice paper rolls, to build confidence and coordination.
In this phase, students dive into the chemistry of spices and the art of the slow-cook. Working in their "Kitchen Brigades," they will explore the migration of flavours across Asia and the Middle East. Key projects include hand-rolling pasta or noodles and balancing the "four pillars" of taste (sweet, sour, salty, and spicy) through dishes like fragrant curries and handmade dumplings.
The focus shifts to complex textures and traditional techniques, specifically baking and preservation. Students explore the cultural identity of bread and fermentation, from French crêpes and Middle Eastern flatbreads to the science of pickling. This phase emphasises patience and precision, teaching students how history and geography influenced the "staple" foods of different nations.
The course culminates in the "Cooking Without Borders" Food Festival. Students are tasked with a capstone project where they research, cost, and prepare a signature fusion dish that represents a specific cultural narrative. The final weeks are a high-octane simulation of a real-world kitchen, ending in a showcase where they present their technical mastery and cultural knowledge to a panel of "food critics."
