Turnitin is an online plagiarism detector as well as an electronic grading and feedback system for students' writing assignments. As teachers create assignments, students submit files from a computer or a cloud-based service like Dropbox or Google Drive. Turnitin checks each assignment for plagiarism (or improper citation) using its OriginalityCheck system. While they have an AI detector, tests have shown it is not yet reliable enough to determine AI use.

(When students create their account, their password needs to be at least 8 characters. Saddleport passwords are only 6 characters. You can have the student just repeat the last digit to create their Turnitin account password. Example: If my Saddleport password is kf5678, I could use kf567888 as my Turnitin password.)
There are two ways to use Turnitin as an integration within Canvas. Neither of these work the same way as the previous integrations did.
Turnitin LTI 1.3 is the one that is most similar to the integration used in previous years. You do the setup and most of the work, including grading, in the Turnitin environment with their tools. This is the recommended option for teachers who are new to using Turnitin within Canvas.
Canvas Plagiarism Framework allows you to create the assignment directly within Canvas, and also allows the use of Canvas SpeedGrader. However, it does not include all the features of Turnitin.
You can use either of these on any assignment within your courses, mixing and matching as you choose. The table here gives more specifics about what is included in each integration.
