Students in Dr. Buday's Intro to Environmental and Sustainability Studies class have been developing projects to support the work of Replenish, our campus food resource, in their efforts to promote food justice at Grand Valley State. From this initial design challenge, students developed diverse solutions that tackle food insecurity on several distinct fronts, including education about gardening and cooking healthy on a dime, expanding the reach of community gardening in Allendale and Grand Rapids, and coordinating a move-out week gleaning event in campus housing. Together, these projects reimagine students' relationships to food systems at GVSU.
