The Extension Services Office and Department of Management of Cavite State University (CvSU) – Carmona Campus, in partnership with the City Government of Carmona, the Persons with Disability Office, and the Persons with Disability Organization of Carmona, Cavite, Inc. (PDOCCI), successfully conducted the second day of “Food Safety First: An Inclusive Training on Essential Food Safety Practices and Skills” at PDOCCI’s Tofu Plant on October 21, 2024, Monday, under CvSUCCESS’ Project KPKNan (Kaagapay sa Pag-unlad para sa KapakaNan ng PWDs). The event addressed critical elements of manufacturing practices, standard sanitation procedures, and hazard analysis in food safety.
The morning session commenced with an in-depth presentation on the Revised Guidelines on Current Good Manufacturing Practices (cGMP). Mr. Nathaniel H. Tolentino, faculty extensionist, explored key topics such as quality control, documentation, quality auditing, and warehousing practices. His insights emphasized the necessity of adhering to stringent protocols to ensure product safety and uphold manufacturing excellence.
Following a brief health break, participants engaged in a technical presentation on Standard Sanitation Operating Procedures (SSOP) and Hazard Analysis Critical Control Points (HACCP). The invited speaker, Ms. Edna V. Bado, a professional food technologist, provided a comprehensive overview of SSOPs and their role as a foundational element for HACCP, which is a systematic preventive approach to food safety that addresses biological, chemical, and physical hazards in production processes.
In the afternoon, Dr. Joan L. Fortuna, project leader, and Mr. Klenton R. Torrevillas, faculty extensionist, led a simulation session where participants applied their newly acquired knowledge in a controlled environment.
The day concluded with the awarding of certificates to all participants, recognizing their active engagement and successful completion of the training. Special acknowledgments were also given to the speakers from both Day 1 and Day 2: Dr. Fortuna, Mr. Torrevillas, Mr. Tolentino, and Ms. Bado.
This training is part of CvSU Carmona’s ongoing commitment to delivering impactful extension services that foster knowledge sharing and skill development, particularly in the fields of food safety and manufacturing.
