2. Rationalization and application of the role of microorganisms in postharvest handling, preparation,, processing and preservation, packaging and storage with respect to pathogenic, spoilage, and fermentative microorganisms

3. Comprehension and application of the principles of engineering as they relate to converting agricultural commodities to the finished products

4. Critical/analytical thinking and technical skills on the functionality of raw materials and the application of thermal and non-thermal food processing techniques, including emerging food technologies

5. Comprehension and application of the principles and various facets of food technology in practical situations, including sensory evaluation, problem solving and environmental sustainability
