The Google documents editor does not include all the features you will find in desktop applications, but the range is growing all the time. They do, however, make collaborative editing very much easier and will work using almost any browser.
When working with others to produce documents, one approach is to edit collaboratively using Google Docs and then download to another editor (eg MS Word) to make use of formatting tools and other features.
When sharing documents, adding comments for other collaborators to see is a useful way to decide what changes to make.
