Yesterday was Chinese traditional holiday because it was known as Midwinter in lunar year. The special food on this day that people like to make is dumpling. Here I tend to talk about the production of dumpling.
Ingredient: 1) 2 pounds flour and moderate water
2)1 pound minced pork meat, moderate minced mushroom, minced shrimp, minced leeks and moderate minced ginger.
3) Moderate soy sauce, salt, sugar, oil, 1 spoon of cooking wine and a little bit five –spice powder.
4) Moderate chicken broth
At fist, Put the 1) ingredients together then make dough. Cut the dough into small cubes then roll them into flat and round pieces. Secondly put the 2) and 3) ingredients, moderate chicken broth together and mix well and cure for thirty minutes, it is the stuffing of dumpling. Thirdly put the stuffing into one piece of dough and squeeze the edges together one by one. At last, put all dumplings into the boiling water then scoop up until they float on the water. Finally it can be served with some vinegar and soy sauce upon request.
Because of the stuffing of each dumpling with some chicken broth, so it would be more delicious and juicy.
