1. Define : dehydration synthesis, hydrolysis, disaccharide, Sucrose, hydroxyl, synthesis.
2. MODELS: You have made Glucose and Fructose. Now, you will be joining them together to make Sucrose. What is formed when a dehydration of any kind occurs? WATER! So, you will remove one hydrogen atom from Glucose and one hydroxyl ( -OH) from Fructose. This will form water, H2O .
When Glucose and Fructose join, they form SUCROSE, which is table sugar.
A. Draw the structural formulas for this reaction. Label glucose, fructose, water and sucrose. Label Reactants and Products. Label this as the dehydration synthesis of sucrose.
