Scallions

These are spring onions, harvested fresh, young and green. 

They can be left as is and dipped raw into tasty dressings, grilled whole and dressed simply with salt, pepper, and oil. They can also be cut to sandwich length and eaten on a grilled onion and butter sandwich. But the most frequent use of these onions is to chop up the whole plant and use as a garnish or mix it into a salad or salsa.
