Radicchio Castelfranco

This mild chicory is good in any application where you would like to use lettuce, but really performs with grilled, fried, or roasted foods as the leaves don't wilt as quickly around heat as lettuce leaves do. I usually dress the leaves as a salad and then place, say, a roasted chicken thigh on top of it, then put the sauce right over the whole thing.  It would also be good with a slice of vegetable terrine or a roasted dressed eggplant on top.

Castelfranco is in season from October 1 - December 1
