Fried Rice

IngredientsRice1 ½ cup Water1 ½ cup Rice
Veggies1 cup Water1 cup Frozen veggies
Stir Fry2 Tbsp. Oil½ tsp. Minced Garlic3 Tbsp. Soy Sauce
Directions:Rice Combine the rice and 1 ½ cups water in a microwave safe bowl, cover with microwave cover and microwave for 8 minutes. Allow to stand 5 minutes or until water is absorbed.
Veggies Boil 1 cup of water in a saucepan on medium heatPlace frozen veggies in boiling water. Cover and bring to a boil. Reduce heat and simmer for 6-8 minutes.
Stir FryIn a skillet, heat the oil on medium heat. Add the garlic and stir.Add in rice and soy sauce into skillet and stir for one minute.Add carrots and peas into skillet and stir for one more minute.
Yield: Serves 4

Grilled Cheese

Ingredients - Per Person2 slices of bread2 slices of cheeseSoftened Butter
DirectionsSpread butter on one side of each slice of bread. Place 1 slice of bread, butter side down in the skillet, place slices of cheese on the bread and place the second slice of bread on top butter side up. When golden brown on bottom, flip sandwich and cook until golden brown on the second side. Cut sandwich in half and serve.
Serves 1

Mummy Dogs

AKA: Pigs in a Blanket

Ingredients - Per Person1 Hot Dog1 Triangle of Crescent Roll Dough
DirectionsPreheat Oven to 325 and line pan with parchment paper.Cut your hot dog in thirdsCut your crescent triangle in thirds.Wrap each hot dog piece with a crescent roll strip. Bake for 13-17 minutes or until golden brown.
Yield: 3 mini dogs

Mini Pizzas

Ingredients 4 Mini Bagels or English Muffins 8 oz tomato sauce 1 t. Italian seasoning ⅛ t. pepper ¼ t. salt 1 c. grated cheese Directions1. Preheat oven to 400 degrees and line a cookie sheet with parchment. 2. Split the bagels or muffins in half - each person gets 2 halves.3. Add the spices to the tomato sauce and mix. 4. Pour the sauce on the bread and spread evenly.5. Grate the cheese and sprinkle on top.6. Bake in the oven for 5-10 minutes or until cheese melts.
Yield: 4 Servings

Spaghetti

IngredientsSpaghetti Noodles Pinch of salt
Sauce Ingredients¾ cup Tomato Sauce¼ tsp. pepper¼ tsp. salt1 tsp. dried onion¼ tsp. garlic powder1 tsp. Italian seasoning1 clove garlic
Directions 1. Put enough water to fill a saucepan ¾ and add pinch of salt. Place on stove at medium heat and boil. 2. Add noodles to boiling water. Cook until Al Dente3. Place the ¾ cup of sauce in the liquid measuring cup and cook in the microwave 45 seconds or until warm. 4. Drain water from pasta and place the sauce and the noodles in a large bowl to combine.5. Serve warm.

Taco Salad

Ingredients8 oz. ground beef1 ½ tsp. taco seasoning¼ head of lettuceChipsToppings As Desired
DirectionsPlace the ground beef in a skillet and break up with rubber scraper.Add the seasoning to the beef. Cook on medium heat ground beef with seasoning 10 - 12 min. or until there is no more red meat.Chop the lettuce and place in a mixing bowl. Add the ground beef to the mixing bowl and toss together. Add salsa or dressing if desired.
