IngredientsGround Beef10 oz diced tomatoes, undrained1 can chili beans in sauce, undrained10 oz tomato sauce½ tbsp chili powder½ tsp. Ground cumin1 tsp. Dried, chopped onion½ tsp salt¼ tsp pepperDirections:1. Cook the ground beef over medium heat until no more red remains. 2. Remove beef from pan and place in a small bowl. 3. Place a sauce pan on the stove at medium-high heat and combine all ingredients in the pan. 4. Cook for 30 minutes and stir every 5 min. with a wooden spoon to prevent burning.
Yield: 4

Hamburger Sliders

Ingredients8 mini hamburger buns1 pound lean ground beef1 large egg1/2 cup minced onion1 clove minced garlic1/2 tsp. salt1/4 tsp pepper
DirectionsIn a large bowl, combine beef, egg, onion, garlic, salt and pepper.Form hamburger into 8 small patties. Turn on exhaust fan and heat skillet on medium heatPlace 2 hamburger patties on the skillet and cook for 3-4 minutes on first side. Flip and cook 3-4 minutes on second side. Ensure there is no red in the middle.Remove from stove and serve warm and top as desired.

Mini Quiche

IngredientsPie Crust2 eggs1/2 cup milk1/4 tsp. salt1/4 cup cheese
Directions1. Preheat oven to 375 and spray muffin tin with pam2. Cut pie crust into circles with circle or biscuit cutters and place in the bottom of each muffin cup.3. Place cheese on top of each pie crust.4. Whisk eggs, milk and salt together in a bowl and pour egg mix into each cup over the cheese.5. Bake in oven until golden brown and bubbly, 25-30 minutes.
Yield: 12 mini quiche

Omelet

Ingredients2 eggspinch of salt and pepper½ T. butter2 Tbsp. Cheese
Directions1. Prepare fillings such as meat ahead of time.2. Beat the eggs, salt and pepper in a bowl until blended.3. Heat a pan with butter on medium heat4. Add the egg mixture to the pan and constantly and rapidly stir with a wooden spoon.5. When the eggs are nearly set, stop stirring and shaking the pan for a couple seconds making sure the bottom of the pan is completely covered.6. Place the cheese in the center of the eggs and fold ⅓ of the eggs over the filling.7. Slide the other third onto a plate and fold the ⅔ onto it. 8. Serve immediately

Pizza Day 1

Ingredients – Day 1⅔ cup lukewarm water (NOT HOT)1 ⅛ tsp. Yeast1 ½ - 2 cups flour1 tsp. Salt½ tsp. Sugar1 Tbsp. Oil
Directions1. In a small bowl, stir the yeast into the water and allow to sit for 5 minutes2. Place 1 ½ cups flour, salt, sugar and oil into large bowl. Add yeast mix and mix with the mixer on medium until combined 3. Knead the dough for 10 minutes with your electric mixer on low speed. Add remaining ½ cup of flour as needed until dough isn’t sticky.4. Cover and Label the dough, leave it to rise overnight.

Pizza Day 2

Ingredients Day 2 Pizza dough 8 oz tomato sauce (season to taste) 1 1/2 c. grated cheese
Directions1. Preheat oven to 400 and Line a pan with parchment paper2. Roll the dough onto a pizza pan. 3. Use a fork to poke holes in the dough.4. Bake the dough for 10 minutes.5. Pour the sauce on the baked dough and spread evenly.6. Sprinkle cheese on top.7. Bake in the oven at 400 for 5-10 minutes or until cheese melts.
Yield: 1 14" Pizza

Stuffed Shells Day 1

Ingredients -8 oz Jumbo pasta shells1 egg, lightly beaten 8 oz. ricotta cheese ½ Tbsp. parsley ⅛ tsp. Salt ⅛ tsp. Pepper ¼ cup grated parmesan cheese½ cup shredded mozzarella cheese
Directions - Day 1_____1. Prepare the shells according to the package directions, Do not overcook the shells, drain and cool. Place in a bag, label and refrigerate overnight. _____2. In a large bowl, combine the beaten egg, ricotta cheese, parsley, salt, pepper, parmesan cheese, and ½ cup mozzarella cheese. Mix well.

Stuffed Shells Day 2

Ingredients - Day 22 cups tomato sauce¼ cup mozzarella cheese
Directions - Day 21. Prepare tomato sauce as desired with spices and spread ½ cup on the bottom of a baking dish. 2. Stuff each shell with the cheese mixture and lay on the layer of sauce. Do this until you run out of shells or cheese. 3. Pour the remaining sauce over the shells, Top with ¼ cup mozzarella cheese. 4. Bake for 20-25 minutes or until cheese is melted and lightly browned.
