Boil the potatoes ahead of time so they're cool enough to quarter. Fry the chorizo. In a separate pan fry the potatoes. When potatoes are close to being done add chopped onions. When they both are just about done, you add the egg. Last you add the chorizo. If you fry everything together the chorizo stains the potatoes more red than mixing them together at the end.

If you want something different with the tamales you can make red beans and rice. But I don't happen to have that recipe in my brain. It might be on the back of a can of black beans or red beans.
