Prawn & Chilli Linguini for 2 people
160g linguine
4 tablespoons olive oil
10 green prawns, peeled & deveined
sea salt
freshly ground black pepper
4 cloves garlic, crushed
1-2 small red chillies, halved
25g butter
50g rocket, washed & dried
Heat oil in a large non-stick frying pan over low heat. Add crushed garlic and chillis to the oil and cook slowly. While garlic is cooking, cook linguine in rapidly boiling salted water according to packet instructions. Drain well. Add prawnsto the oil, season with salt & pepper & cook for 1 minute. Add butter and reduce heat to low. Add the rocket & linguine & toss until pasta is well coated. Use extra rocket to garnish the dish. Serve with cracked pepper.
