Thai Cucumber Salad (yam thang kwa)

2 cucumbers seeded and diced

2 tablespoons finely chopped onion

2 tablespoons sliced shallots

2 tablespoons dried shrimps

2 tablespoons coriander leaves

4 tablespoons mint leaves 

2 tablespoons fish sauce

4 tablespoons lemon juice

1 teaspoon sugar

3 tablespoons crushed roasted peanuts

1/2 teaspoon chilli flakes

Combine all green ingredients.  Sprinkle with fish sauce lemon juice and sugar mix.  Then sprinkle with peanuts and chilli flakes
