Roasted vegetables

Given that roasted vegetables are cooked together in the oven,  the key is to make sure that that they all reach a cooked state at the same time.  I work on about 45 minutes in the oven at 190 deg fan forced.  My mix has included onions, capsicum tomato, squash, zucchini with garlic gloves mixed through and rosemary on top.  The onions need to be cut into eighths to ensure they cook through.  Vegetables are topped with olive oil and salt is added at the end of cooking.  For three people I used 2 onions, 2 capsicums, two zucchini, 6 squash, 2 tomatoes.
