Pan fried Quail Breasts with Waldorf Salad
Ingredients (serves 4)
400g Game Farm quail breasts
2 medium Granny Smith apples, washed, dried
2 medium red apples (like lady williams or red delicious) washed, dried
3 celery sticks, washed, finely sliced
80g (1/2 cup) walnut pieces, halved
2 tbs home made mayonnaise
2tbs verjuice
Salt & ground black pepper, to taste
8 butter lettuce leaves, washed, dried
Method
Marinate quail breasts in oil lemon and pepper then pan fry lightly
Oven roast walnuts
Cut the apples into quarters and core. Cut each quarter into bite-sized pieces and douse with lemon juice to stop browning.
Place the apples, celery, walnuts, mayonnaise and verjuice in a medium bowl.
Season with salt and pepper and mix to combine.
Place 2 lettuce leaves onto each serving plate and spoon the salad over the lettuce. Serve immediately
