Almond Bread
Preparation time: 15 to 30 minutes
Ingredients
3 egg whites
1⁄2 cup caster sugar
1 cup plain flour
1 heaped cup whole almonds
Method
Beat egg whites with an electric beater until soft peaks form.
Add sugar gradually and beat until dissolved.
Carefully fold in sifted flour and almonds.
Spread mixture into a greased log tin.
Bake at 180°C fan forced for 30minutes.
When cold, wrap loaf in foil and leave for a day or so.
Cut into very thin slices.
Place slices in a single layer onto oven trays and bake at 140°C fan forced for 14 minutes until dry and crisp.
Recipe notes
Almond bread will keep for at least a month in an airtight container. Pistachio nuts can be mixed with the almonds or used in place of. Sliced and wrapped in cellophane bags, it makes a great Christmas gift.
