This is a “phoney” because of the sneaky refried beans in place of traditional (intact) kidney beans; they still provide protein and act as a thickener.

Serves 2-3 large portions
Stovetop version. (See crock pot version below.)
Saute in stock pot x 5-8 min:
1/2 yellow onion, diced small
1 celery stalk, diced
Then add:
1 clove garlic, minced or fresh-grated
Saute 1 minute more.
Then add:
2 cups frozen veg blend (carrots, peas, corn, green
beans); brought to room temp.
14 oz diced tomatoes, Italian style (not drained)
2 cups veg broth
3 Tbsp refried beans, fat/lard-free
Stir and bring to boil. Add:
1/4 cup orzo pasta
1/2 tsp basil
1/2 tsp parsley
1/2 tsp oregano
1/4 tsp salt
1/4 tsp black pepper
Stir. Boil according to orzo’s directions (~8 min)
Stir again. Adjust seasonings, if needed.
Notes:
*This is a light soup that should be served with side salad or crusty bread. If you need a more filling version, add 1/2 to 1 full 15 oz can kidney beans, rinsed/drained. I like a thick soup, but you may want to add additional veg broth.
**For a Slow cooker version, replace Orzo with 1 medium red potato (3/4 - 1 cup worth), diced small. Throw all ingredients into crock pot on low x 8-10 hours. However, I admit I prefer the stovetop version; potatoes can be under cooked if not chopped very small.
