I've enjoyed cooking most of my meals since college in the early 2000s. As a student, I found creative ways to make my grocery budget stretch, like adding beans to my taco meat. In 2014, I discovered my chronic nausea was due to a worsening dairy intolerance, and I had to eliminate dairy from my diet. In 2016, while dealing with a health issue, I started searching for ways to help support my body, to help it heal. That's when I began reading as many health books, research papers, and cookbooks as I could get my hands on. As a result of what I read, I began reducing my meat intake. A few years later, I watched Forks Over Knives, and I became fully convinced that a diet minimizing animal products and primarily focused on plants was the best for me. It gives me energy, helps me maintain my weight, keeps me (ahem) regular, and I feel it is an investment in my future. I've come to see food as life-giving or life-draining...and I want to eat more food that gives me life, so I can thrive.
Over the years, friends, family and coworkers have asked:
"Your lunch looks/smells so good, but...is the food bland?"
"Is it complicated to make? because I just don't have time."
"I bet it's expensive?"
The answer to all of those is no. (See Getting Started.)
