This is great for a night at home watching a game, or as part of a larger salsa bar.
Lazy Layer Dip - VegWithMandy.com
serves 3+
*Each of these layers can be eaten with tortilla chips on its own, but if you plan to serve this as a layer dip, have each person assemble their bowl as they go.
It is too juicy/runny to pre-assemble.
Black Bean Dip - VegWithMandy.com
Serves 4
In Food Processor*, place:
1/2 red onion, roughly chopped
15 oz black beans, drained, rinsed
1 garlic clove* (fresh or pre-minced)
Juice of 1 lime, fresh
1/4 tsp salt (omit if on low sodium diet)
1/2 tsp paprika
1/2 tsp cumin
1/2 can of Rotel (~6 Tbsp), -LIQUID drained BUT SAVED***
Process until mostly pureed.
Serve as dip with:
tortilla chips
Notes: *This does NOT work as well when simply mashed with potato masher.

flesh of 1 Avocado
1/4 purple onion, roughly chopped
Juice of 1 lime, fresh
1-2 Tbsp liquid from Rotel
1/4 tsp salt (reduce if on low sodium diet)
2 tsp Cilantro, dried
Process until mostly pureed

In bowl, place:
3/4 to 1 (10oz) package cherry/grape tomatoes, diced small
1/4 purple onion, diced small
Juice of 1 lime, fresh
1/4 tsp salt
2 Tbsp liquid from Rotel
1 tsp Cilantro, dried
Black pepper to taste
Notes: Why is it called “Lazy Layer Dip”? Because these can each be whipped up in a flash, and stored in individual bowls for easy clean-up.
And since I’m notoriously prone to touching my eyes after slicing jalapenos (anyone else?), I’ve utilized the mild heat from the Rotel juice in place of those delicious pepper demons!
Tip: Really short on time? For the Laziest Layer Dip, replace Black Bean Dip with fat-free Refried Beans, and Mix in some lime juice and onion powder into store-bought Guac, but still make the Pico. : )
