Oughta "Ricotta" Pizza Dippers- VegWithMandy.com
serves 3+
In small bowl, place:
4 Tbsp all purpose flour
4 Tbsp water
Stir until just smooth, set aside.
In:
small (street-taco sized) flour tortilla, fill with dollop of
Oughta "ricotta".
Roll into taquito shape.
RIght before finishing, make thin line of water/flour mixture on edge to make it stick. Then finish rolling, pressing edges together.
"Toast" taquitoes in cast iron pan on medium heat x 2-3 mins to make them crunchy, rolling every 30 sec to get all sides.
Dip in:
Pizza sauce, store bought, until I perfect my own recipe ; )
Notes: ***I've not tried it yet, but you could consider putting pizza toppings inside the dippers before rolling, such as black olives, pre-sauteed veggies (mushrooms, bell pepper, onions), etc.
*You may want to lightly warm the "ricotta" in microwave ~10 seconds first, so it's not lukewarm.
