For those times when you crave greasy Chinese food but know your body deserves better. In about 20 minutes, you'll be eating dinner, and your body will thank you.

Serves 4-6; Gluten-free option*
Wrap in towel or use tofu press to remove excess water from:
14 oz package extra firm tofu
Then crumble into small pieces, using hands or fork to help break it apart.
Meanwhile:
In medium saucepan, heat water to boil:
rice noodles (I used Taste of Thai Rice Noodles, Linguine; think Pad Thai style)
Boil according to directions when water is ready (~4-6 min). **Boil enough for today's servings only; for small families with leftovers, boil more rice noodles immediately before serving.
In separate large metal pan that has a lid, place:
1 package of chopped cabbage (I used coleslaw blend)
10 oz package matchstick carrots
~1 cup of water
“Steam” veggies by closing lid x 3-5 minutes; they should be getting soft.
Remove lid, and sautee another 3-5 mins - you want cooked but not soggy.
Add veg broth or water if they start to stick to pan.
In the last few minutes, add crumbled tofu and basic In-a-Hurry-Hibachi sauce:
8 Tbsp (that’s 1/2 c) soy sauce, low sodium
4 tsp (that’s 1 Tbsp + 1 tsp) rice vinegar, plain/”natural” variety
1/4 tsp black pepper
Stir, and leave on low for a couple of minutes until tofu is warmed.
Optional add-ons:
Thai Chili sauce (highly recommend)
Crumbled uncooked ramen noodles for crunch (yep, highly recommended, too)
Green onions, sliced
Edamame or green peas, defrosted if frozen
Garlic powder, to taste
Notes: Can be made gluten-free if you use gluten-free rice noodles, substitute tamari for soy sauce, and omit crumbled ramen noodles. As always, check labels carefully if your diet requires.
This is Not a low-sodium meal, although it is probably lower in sodium than any takeout Chinese you'd order.
