Ingredients:
1 cup butter, softened
2 cups sugar
7 eggs
Juice and grated peel of 1/2 orange
3 cups all-purpose flour
1 teaspoon baking powder
Instructions:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch loaf pan.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the orange juice and peel.
In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before removing and slicing.
Tips:
For a richer flavor, use brown sugar instead of white sugar.
Add 1/2 cup of chopped nuts, chocolate chips, or dried fruit to the batter for a fun twist.
If you don't have a loaf pan, you can bake the cake in a 9x9 inch baking dish for about 30 minutes.
