Team leaders are expected to continually model appropriate date marking practices for employees.
Team leaders will check refrigerators/coolers daily to verify that foods are date marked and that foods exceeding the 14-day time period are not being used or stored.
How should problems be fixed?
Team leaders must immediately train and counsel employees who are not properly date marking raw and ready-to-eat potentially hazardous foods.
Foods that are not date marked or that exceed the allowable time period (7 days or 14 days for vacuum sealed product) will be discarded.
