1 ½ cup mashed sweet potato
1 teaspoon vanilla
½ cup coconut flour (or regular flour)
¼ cup almond butter
½ cup cocoa powder
¼ cup of maple syrup
¼ cup coconut oil, melted
Pinch of salt
1 ½ teaspoon baking soda
½ cup chocolate chips optional
Preheat oven to 350ºF and line a baking pan with parchment paper.
In a mixing bowl, Combine sweet potato, maple syrup, almond butter, coconut oil and vanilla until smooth.
Mix in baking soda, cocoa powder, coconut flour and salt until batter is formed.
Fold in the chocolate chips.
Pour batter in your baking pan for 25 to 30 minutes (or until a toothpick inserted in the center comes out clean).
Leave brownies to cool, It will look like underdone but it firms as it cools.
Slice them in squares.
