1 medium onion diced
1/2 red bell pepper seeded and diced
4 garlic cloves finely chopped
2 tsp paprika
1 tsp cumin optional
1/4 tsp chili powder/flakes
6 fresh tomatoes chopped
5 large eggs
salt and pepper to taste
1 small bunch of chives optional
1 small bunch fresh parsley/cilantro chopped
Heat olive oil in a large pan. Add garlic and onion cook for 5 minutes or until the onion becomes translucent.
Add red bell pepper, chives and chopped tomatoes into the pan. Season with salt and pepper and add chili flakes or powder. Simmer until it will become sauce.
Use your large spoon to make small wells in the sauce and crack the eggs into each well.
Cover the pan and cook for 5-8 minutes, or until the eggs are done according to desired.
Garnish with chopped cilantro/ parsley.
Serve with garlic bread or toast.
