1 kg Mussels, cleaned
1 medium onion sliced
2 cloves garlic crushed
1 thumb ginger crushed
2 tablespoons cooking oil
1 can Sprite
4 tomatoes slices
Ground black pepper
Pinch of salt to taste
Parsley
Heat oil in a cooking pot.
Sauté the garlic, onion, ginger and tomatoes. Continue to cook until the onion and tomatoes becomes soft. Season with ground black pepper. You may add salt, if preferred.
Add cleaned Mussels and Sprite and bring to boil. Cover the pot and then cook in medium heat for 5 to 8 minutes.
Stir and add parsley.
Cover the pot and cook for another minute.
Transfer to a serving plate.
Serve with rice.

Note:
How to Clean Mussels:
Look through the mussels, if you find any cracked, chipped or open mussels, discard them. About 30 minutes before you make your recipe place the mussels in fresh water. As the mussels breathe it will expel any sand and take out the "beard". Scratch the dirt from the shells a bit with brush or knife.
I use a can of Sprite instead of white wine and I love the taste of the broth.
