There are multiple ways you can program the controller on a Metacycle, but they all have certain, specific steps that you need to take.
Hardware: You'll need an adapter to interface with the controller on the bike. The communication protocol here is CAN bus to the bike and a serial protocol to the software.
Software: This presents a friendly interface to the various parameters and communicates to the adapter with a serial protocol.
Testing: You change settings and see how the bike performs.
The most common approach involves making a cable that plugs in through the USB port in the storage compartment, or cable that connects to the 20-pin cable that attaches to the display. With either of these approaches, you will use the Windows software to configure the controller.
Votol also has an Android app that uses a Bluetooth adapter.
Lastly, there's MetaHack, a USB device that connects through Bluetooth to an app that runs on either Android or iOS.
Proceed only at your own risk. Modifying your settings will certainly void your warranty. Going beyond what your hardware can support will leave you with a large, expensive paperweight and you could get stranded. If you do decide to go forward, go with caution and monitor your vehicle for the slightest problems, especially with excessive heat.

Factory 2021 Metacycle Settings - Pulled directly from an unmodified Metacycle. Default settings are explained on the Serial Protocol page - look for the SHOW command's response.
A person has mentioned that trying to increase the controller's output beyond 250 A will not work because the controller is also limited internally. This may be contradicted by other users' experiences and the manufacturer's own "600 A peak" rating. Either way, running at 250 A for a long time may burn out the hardware, or could be just fine (according to users).
Phase current appears to be able to be increased by 13% to 9960, if you trust putting the additional load on the system. Also, Burt Shulman's configuration is the following, though he does say, "I only floor it for brief periods (10 secs)........All this is at your own risk of smoking the controller and motor."

MetaHack creator goes over some of the settings that he changes to get more performance (at the expense of consuming more energy) out of his Metacycle. Good settings can be found for eliminating the sluggishness when accelerating from a stop.
