Kurume is the birthplace of Tonkotsu ramen, now popular around the world. 

Moreover, Kurume is known for having a lot of delicious local cuisines, such as Gyoza, Yakitori (skewered meats), and Chikugo-Udon noodles.

Taiho Ramen

(Tonkotsu Ramen)

Tonkotsu (pork bone broth) Ramen was created in Kurume in 1937. To draw out the flavor of the pork, a chef boiled pork bones to prepare a Chinese-style noodle dish. Accidentally overcooking the pork bones, the broth turned white and became what we know as Tonkotsu Ramen. Using a Yobimodoshi cooking technique, the master stock method of increasing stock for depth and complexity, the ramen became known as Kurume Ramen. Spreading throughout Kyushu and Japan, Tonkotsu Ramen is the most internationally recognized style of ramen noodles.

Hotarugawa

(Kurume Yakitori)

Kurume’s popular grilled skewers are known as “Yakitori”. Yakitori literally means grilled chicken, but in Kurume there are many kinds such as pork, beef, chicken, seafood, horse meat, and vegetables. Motsunabe is also popular in this restaurant.

Nyan Nyan
(Gyoza)

It's a long-established store established in 1955. You can choose from bite-sized gyoza for 1 person (20 pieces) for 720 yen, fried gyoza, or boiled gyoza. This restaurant's way of eating grilled gyoza is interesting, and its feature is to put the sauce on the gyoza. The sauce is vinegared soy sauce, heaped with chopped Chinese chives and ground sesame seeds, and red chili pepper oil if desired.

Udon noodles making lesson

You can enjoy udon making experience (Stretch the udon dough and cut it.) and taste it at a famous Chikugo udon restaurant!

Hotomeki-An

A great place to stop for lunch is the restaurant "Hotomeki-An" adjacent to Michi no Eki Kurume.

The restaurant uses vegetables grown at its own farm, "Onaka Genki Noen", and offers about 30 local dishes and creative dishes. Ordering is cafeteria-style, with customers picking up a tray, freely choosing their favorite dishes, and paying the bill as they go.

The vegetables at Onaka Genki Noen are grown with the utmost care using no pesticides or chemical fertilizers, so they taste and feel fresh and very delicious! It is great that everyone from children to adults can enjoy them with peace of mind. The rice is made from brown rice produced in Kurume with reduced use of agricultural chemicals, salt is natural sea salt, and soy sauce and miso are made using only the finest ingredients and production methods.

Dharmasagara

A South Indian restaurant that has been listed in the Michelin Guide (Tokyo edition) for five consecutive years and has been popular for 17 years in Ginza, Tokyo, relocated to Kurume last year and is now the talk of the town among gourmets.

The owner, who is from Fukuoka, uses organic and pesticide-free vegetables and herbs grown with care to recreate the authentic cuisine of the South Indian region. Incidentally, the majority of people in the South Indian region are vegetarians, so you can enjoy a vegetable-centered food culture.
