a database lab (a 6x8"? baking tray)
carrots (3 large)
potatoes (2 medium)
flour (460ml)
olive oil (400ml)
eggs (4)
honey (like. a few squeezes)
sugar (100ml)
salt
vanilla extract (1 tablespoon)
cinnamon
nutmeg
ginger powder
something twisted and awful inside (to fuel the potato-mashing and carrot-grating)
PREP:
Steam the potatoes for however long it takes for them to become mashable. Use smaller potatoes if you want it to be slightly faster, just adjust the number of potatoes accordingly. You could cut large potatoes up, but that would break the skin and affect their moisture content (they'll lose water). I steamed mine for 30 mins, but mashing the potatoes was a workout, so you might want to do it for longer.
In the meantime, peel and grate the carrots. Normal grating is fine, they don't have to be microplaned.
Preheat the oven to 180°C.
When done steaming, peel and mash the potatoes as smoothly as you can.
Measure out a cupful (~240ml) of the mashed potatoes. You can eat the rest.
BATTER:
Dump the flour in a large bowl. Add the sugar, and a pinch of salt. Mix.
Mix the olive oil in.
Mix the mashed potatoes in.
Mix the eggs in.
Add the honey and however much cinnamon, nutmeg, and ginger you want. I just lightly covered the batter surface with each spice, going a bit heavier on the cinnamon.
Mix the grated carrots in.
BAKE:
Leave the cake in for about 30-45 mins, depending on your oven strength/batter depth.
