four people
butternut squash (800g whole)
turkey mince (500g)
onion (2 small)
garlic (2 cloves)
roast seasoning packet
lemon
butter
milk
salt
pepper
MASH:
Chop the butternut squash up into large chunks, without the skin.
Salt and boil for about 30 mins, or until mashable with a fork.
Mash with a fork. Add some butter and milk to make it as creamy as you want.
Zest half a lemon over the top and mix in.
MINCE:
While the squash is boiling, preheat the oven to 200°C.
Mix the roast seasoning packet into the turkey mince.
Dice the onions and mince the garlic.
Fry the onions and garlic in butter.
Once the onions and garlic have browned, add the turkey mince in and fry for about 12 mins. Salt and pepper as you wish.
ALL TOGETHER:
Butter a glass ~6x8 roasting dish.
Tip the mince in.
Spread the mash on top.
Put the whole thing into the oven for about 45 mins, or until the top is golden.
To enhance the goldeness, you can brush butter on the top towards the end.
