Back again with some recipes - wanted to change things up a bit from recipes from our menu for the week so thought I would share this recipe I had been playing with recently and finally got the time to weigh and type up!

I am a nut butter fiend! I probably have several jars kicking about the cupboard and I am very happy to walk past and just dip a bit of dark chocolate in a peanut butter as a snack (sorry Joe!) so I thought I'd make use of them (and save the jars from me just dipping into them)

This recipe only has three ingredients (woohoo!) unless you want to add chocolate chips or cocoa powder (highly recommend, currently munching a chocolate one I made for this photo and it's like having a small peanut brownie cookie hybrid - although I am snacking before dinner shh!)

Three ingredient peanut cookies (makes roughly 12)

You will need

  • 260g Nut butter

  • 100g sugar (for these I used coconut sugar, use a darker sugar for a more chewey cookie!)

  • 1 Large egg

  • Non-stick greaseproof paper (if you have a silicone mat this would be perfect)

  • Baking tray

  • A fork

Method

  1. Preheat your oven to Gas mark 4/180 degrees

  2. Into a bowl, add your peanut butter, egg and sugar until completley mixed.

  3. Grab about a spoons worth of mixture (or roughly 30g) and roll into a ball and place onto your non-stick paper. Do this until you have run out of mixture

  4. Once you have rolled all of your mixture into balls use your fork to squash a grid shape into the top of your cookie and flatten slightly (you could use your thumb to make thumbprint style cookies!)

  5. Bake for 8-10 minutes or until the edges have started to turn golden.

  6. Place onto a rack, leave to cool and enjoy!


Why not...

  1. Cut the sugar? Omit the sugar in this recipes for about 2 TBSP powdered sweetner

  2. Add chocolate! Add 2TBSP of cocoa powder or chocolate chips for extra indulgence!
