A-peel-ing banana pancakes 09.03

Another week come and gone!

Managed to donate some sausage and mash meals to our local YMCA last week, it is such an honour to be able to help the community and town where I have grown up and just keep a bit of positivity about what else the world can offer!

No cake for this week, it was great to see everyones faces when we put it on the menu and the feedback was phenomenal, but it's great to take a step back and really look to see where this part of the business will take us, be it focus on all our offered dietary requirements for sweet treats or not lets see...

For now, we had an abundance of bananas and apples turn up with my Fareshare delivery, and with the eggs delivered last week I had to see if you could make simple pancakes... and you can! These super light pancakes are delicate (hint, keep them small as they are so light!) sweet from the bananas, simple to make and go super well with the stewed apple I made to use up my apples too! Also gluten free! (Sorry not yet vegan, I want to try this recipe with a flax egg and will report back!)

Banana pancakes (makes 6 small pancakes)

You will need

  • 2 Medium eggs

  • 1 medium, ripe banana

  • 1tsp Baking Powder

  • Oil for the pan

  • Small non-stick frying pan

  • Blender/stick blender

Method

  1. Crack your eggs into a bowl, peel your banana and add your baking powder and banana into the bowl with the egg.

  2. Blend your egg mixture until smooth.

  3. Place your frying pan onto a low heat with a spoon of oil.

  4. Pour a small amount of mix into your frying pan and leave to cook on a low heat. You will need a good non-stick pan for this. The pancakes will look quite dark quite quickly but that will just be because of how ripe the banana is (you should know if you burn it) it should only take a few minutes on the first side, until it is golden brown carefully flip and finish on the other side for a few minutes.

  5. Serve hot and enjoy (or cool them down and get them ready for breakfast for the next few days!)

Why not...

  1. Serve with stewed apples! For every medium sized apple you peel, de-core and dice, I would add in 2tsp of sugar and 5/6TSP of water, stew on a low heat until the apple has become soft and the water is absorbing nicely - try this with other fruits like strawberries, blueberries and pears!

  2. Add spices into your pancake batter! Vanilla, cinnamon, maybe even some nutmeg will boost this flavour profile up.

  3. Go nuts! Top with flaked, pan toasted almonds or pecans for texture, healthy fats and extra fancy points! Top with chocolate sauce and you've got dessert ready to go!
