Get your quiche on! 02.03.21

I mean I should say crust-less quiche but it didn't flow as well... Happy Tuesday! Another crazy week of meal prep, oven searching and menu thinking!

The sun has helped a lot with my focus on my meals, it can be difficult trying to think of meals to make every week whilst keeping them healthy, avaliable to all our catergories and dietary requirements, and use our surplus food, a lot of boxes to tick! Sunny days gives me excitement for the future, having hearty pasta salads in the park or (soon!) meeting friends in the summer for a BBQ, gosh it's already making my mouth water...

This week with my inspiration (and copious amounts of eggs from Fareshare!) I wanted to make a filling dish, ready hot or cold, and actually really healthy for you with all the lovely eggs for an easy source of protein and good fats - check the recipe below for what we have used for today and check out the 'why not' section under the recipe for flavour combos!

Crustless Quiche (serves 2 as part of a main meal)

You will need

  • 3 Medium eggs

  • 75ml Milk (or half cream/half milk!)

  • 2 rashers of bacon diced

  • 50g grated cheddar

  • Fresh chopped herbs (optional - we used thyme)

  • Salt and pepper

  • Either two ramekins or one slightly larger pasta bake style dish (we used the dish in the photo)

Method

  1. Preheat your oven to gas mark 4/170 degrees.

  2. Fry your bacon until it is slightly golden on the edges

  3. In a bowl, mix together your salt, pepper, herbs, milk and eggs until combined and place into your chosen ramekin or dish.

  4. Place your cooked bacon into the dish with your egg mixture and top with cheese and your chosen herbs if using and place in the centre of your pre-heated oven, checking after 20 minutes to see if there is still a wobble in the centre - it should take about half an hour to 40 minutes to cook.

  5. Leave to cool slightly and either enjoy fresh out of the dish to leave to cool completly and save in the fridge for a quick meal!

Why not...

  1. Try a variety of flavours? Pea, spring onion, mint and goats cheese, roasted squash, onion and chorizo, or just simple ham and tomato!

  2. Make this in muffin tins for a quick grab and go breakfast in the morning, or pop in the microwave for a minute or two before you go!

  3. Omit the dairy or swap with a dairy free alternative - it just adds a lovely texture.
