A little about Arroz

Arroz is a very versatile dish. It can be served as an appetizer, side dish, or a base for a seafood entre.

  1. Fry pieces of chicken in a saucepan untill brown.

  2. Chop half an onion, one clove garlic, and parsley and put into the pan with the chicken.

  3. Add Salt and pepper

  4. Chop a can of diced tomatoes and also put into pan.

  5. Reduce the liquid from tomato.

  6. Add 1 Cup rice in pan and cook for 20 minutes

  7. It is ready to eat

  • stock/broth

  • garlic

  • salt

  • onion

  • chili flakes

  • celery/rapini

  • rice

  • tomatoes

  • bay leaf

  • olive oil

History:

Arroz is a very popular dish in Portugal. It includes rice with smashed tomatoe juice with chicken on a bone or regular chicken. But my Srandma said that chicken on the bone is better to use because it has more flavor. Rice has been around Portugal since the 18th century and most dishes in Portugal include rice because there is so much in Portugal. Portugal alone produces 150 – 180 million kilos of rice a year. It is grown in the 3 rivers in Portugal, the Mondego in the Coimbra/Aveiro region, the Tejo in the Ribatejo region and the Sado in the area of Alcácer do Sal.

Interview:

When my Grandma was little, in thier house they woulde have a chicken cage. And everytime my Grandma would make this Arroz with Chicken, she would take one of the chickens from the cage twist its neck of the chicken and cut of its head. She would then let the blood drip down and start cutting it to put in the rice.
