Bacon and Cheese Frittatas

Back in the '80s my grandma and grandpa along with my dad and his two siblings lived in Germany. As new Americans who did not speak a lick of German and who were only there for my Grandpa's business, they needed some easy homemade dishes. My Grandma was a member of the American Women's Club of the Taunus who had their own newspaper. So my Grandma sent out a form for people to fill out with their favorite recipes. Hundreds of people did this and my Grandma made every single one for a meal for my Dad and his siblings. They sold this book to neighbors, people in town, and even to the military. The book had on one side the American writing and the other translated to German. These are Bacon Cheese Brittatas.

Ingredients

4 T. butter

4 T. flour

1 1/2 cups milk

1 green onion, minced (chopped or sliced)

1 cup shredded Cheddar cheese

6 T. crumbled cooked bacon

1/2 tsp. salt

1/8 tsp. pepper

2 tsp. butter (melted)

How to make


Preheat oven to 400 F. Grease 9x9 inch pan. Beat eggs, milk, onion, butter, salt, and pepper until well blended together. Pour mixture into pan. Sprinkle cheese and bacon on top. Bake 20 minutes until golden brown.
